
Smash Burgers
Who doesn't
like a good burger? These are good burgers, they're very easy to
make, and they're delicious. That's a double with Swiss in the
picture.

| 1 tsp | freshly
ground black pepper |
| 1 lb | 80/20 ground chuck |

| 3 or 4 | hamburger buns |

Mix the onion
powder, granulated garlic, paprika, salt, and pepper together in
a small bowl and set aside.
Loosely form
the beef into 3 or 4 balls and set aside.
Heat a large
griddle or a large cast iron skillet over medium high heat for
at least 10 minutes. Add 2 tablespoons of the butter in separate
locations to the skillet and let them melt. Very quickly, place
the buns, cut side down, on the griddle. Rub the buns in the
butter when you put them on the griddle. Cook the buns for 15 to
30 seconds or until they are lightly browned. Set the buns aside
on a plate.
Put 1
tablespoon of butter on the skillet and let it melt. Put the
first ball of the beef on the melted butter and, using two large
crisscrossed spatulas or a burger press, press down on the beef
for exactly 10 seconds. You are trying to get a good browned
crust on the bottom of the patty. After you press down on the
burger, sprinkle as much of the spice mixture as you want on
top, and let it cook for 1½ to 2 minutes. If your skillet is
large enough, start another burger now. If not, wait until you
finish the first burger.
After the
bottom of each burger browns, flip it, and sprinkle as much
spice mixture as you want on top. Top it with a slice of cheese
and cook for 1 more minute while the bottom browns and the
cheese melts.
Serve the
burgers on the toasted buns with your favorite toppings.
