We make chili a little different at our
house. Because like any good chili THERE ARE NO BEANS
IN OUR CHILI. Chili with beans is just bean stew. Also, we use hominy instead of
ground corn or masa and we add ground pork because it gives the
chili a good texture and taste. We make our own chili
seasoning and really like this recipe. We don't buy any store
bought chili mixes. This recipe is probably pretty
different than the chili you make at your house but give
it a try, I bet you'll like it.
First make the seasoning.
Chili Seasoning
2 tbl
chili powder
2 tbl
paprika
1 tbl
ground oregano
1 tbl
ground coriander
1 tbl
granulated garlic
1 tbl
onion powder
1 tbl
celery salt
1 tbl
salt
2 tsp
ground cumin
1 tsp
black pepper
Mix well and store in a
sealed container
Chili
1 Lb
ground beef or ground chuck
1 Lb
ground pork
1 can
hominy (15.5 oz can)
1 can
diced tomatoes with chilies, plus one
can of water
1 can
tomato paste (6 oz can)
4 tbl
chili seasoning (recipe below)
1 tsp
salt
Now make
the chili.
Brown the ground meat and pork together in a large
pot. Put the browned meat in a colander and rinse the
fat off. Put the meat back in the pot, add the
tomatoes (with juice), hominy, tomato paste, chili
seasoning, salt, and water. Bring everything to a
boil, lower the heat to a simmer, cover, and cook for 20
minutes.
Serve in bowls with crackers or if you are like my wife,
serve it over rice.
