Brussels Sprout Soup Yuck!


I know, I know, you hate Brussels sprouts but I love them and this soup is really good.  It's hearty, it's good for you, and if you make it with chicken or turkey sausage, it's low in calories.  Don't use frozen Brussels sprouts as they will turn to mush in the soup. 

1 lb
fresh Brussels sprouts with the stems trimmed and cut into quarters
2 cups
carrots, peeled and cut into ½" chunks
½ cup
celery, diced
1 lb smoked sausage, cut into ¼" slices (chicken or turkey for low cal, pork for more flavor)
½
medium onion, chopped
1 tsp
granulated garlic
2
bay leaves
5 cups
chicken or ham broth, chicken is good but ham is better, I use Better than Bouillon

salt & pepper

Place everything but the Brussels sprouts in a large pot and bring to a boil.  Reduce the heat to a simmer, cover, and cook for 20 minutes.  Turn off the heat, add the Brussels sprouts to the soup, and put the lid on. There will be plenty of heat left in the soup to cook the Brussels sprouts.  Let this sit, covered, for 10 minutes then remove the bay leaves, season to taste with salt and pepper, and serve.
