Brennan's Bananas Foster

There probably isn't a more famous or iconic desert than Bananas Foster in all of New Orleans. This recipe was invented at Brennan's restaurant and it used to be on their website, but for some reason they have taken it off.  Don't use really soft bananas for this dish as they will fall apart.  Because this dish involves a pan with flaming rum, I like to cook it outside on the side burner of my bbq grill.  Lastly, this also makes amazing Bananas Foster pancakes or French toast.  Just make the recipe without the ice cream and spoon it over the pancakes or French toast.

¼ cup (½ stick) butter
1 cup brown sugar
½ tsp ground cinnamon
¼ cup banana liqueur
4 firm bananas, cut in half lengthwise then halved again
¼ cup good dark rum
4 scoops good vanilla ice cream

Start by melting the butter over medium heat in a non stick frying pan.  Add the sugar and cinnamon and stir while it bubbles and the sugar dissolves.  Stir in the banana liqueur then add the bananas.  When the bananas soften add the rum. Flame the rum. Place scoops of ice cream on four different plates.  Using tongs, lean four pieces of banana on each scoop of ice cream.  Spoon the sauce over the bananas and ice cream and serve immediately.
